Red kuri squash is small to medium-sized, with a hard, orange skin and creamy yellow flesh. It has a sweet, nutty flavor and a smooth texture that's similar to cooked chestnuts. The word "kuri" is Japanese for chestnut. It can be used in many sweet and savory recipes, such as soups, stews, casseroles, muffins, quick breads, and tarts. It can also be used as a substitute for sweet potatoes in many recipes.
