The Gilfeather turnip is a white, sweet, heirloom vegetable from Vermont, named after its cultivator, John Gilfeather, and recognized as the state vegetable. It's a cross between a rutabaga and a true turnip, known for its creamy texture and unique cultural heritage, which has been preserved by farmers and organizations like Slow Food. It can be cooked in various ways, including mashing, pureeing, or in soups, and is celebrated annually in Wardsboro, Vermont.
