Description
Beef neck bones are a flavorful and versatile cut, derived from the neck of the cow, known for their rich, savory flavor and gelatinous texture when cooked. They feature a combination of bone, connective tissue, and meat, with the meat becoming tender and the connective tissue breaking down during slow cooking methods like braising or stewing. This makes them ideal for soups, stews, and broths, where their collagen and marrow contribute to a deeply flavorful and rich base. Our goal is to help you nurture the ones you love by making eating well easier.
We deliver healthy, humane beef raised in an intensive silvo-pasture system. We are working to grow as much healthy food as possible in an ecologically sound way. (We graze in alleys between rows of nut trees, and use no chemical fertilizers, pesticides or herbicides. No hormones ever. We will use antibiotics for individual animals if other natural remedies haven't worked, in accordance with guidelines in the National Organic Standard. (This is rare, and we track which animals have received antibiotics.)
We currently offer beef year-round. Stay tuned for lamb, mutton, pork and pecans.
