Pearl Oysters are delicate with a sweet almond flavor. Anything you can do to chicken you can do to pearl oysters including breading and deep frying. Pairs well with chicken and cream sauces. Tear along the gills, sauté in butter and add your favorite BBQ sauce to make a Pulled ‘meat’ sandwich. Remove stem where gills begin. Save stems for stock and broth.
