Poblanos are especially delicious roasted: blister them under the broiler or on the barbecue, then peel away the skin and add them to tacos, quesadillas, eggs, soups, sauces or salsa. Their broad shape and sturdy walls also make them perfect for stuffing with rice, beans, meat and cheese. When allowed to ripen and then dried, poblanos become the peppers known as anchos.
