Little Way Farm is a regenerative farm ran by the Sroka family in Siler City. Their 100% grass-fed, grass-finished beef cattle move twice a day to fresh pasture, following intensive rotational grazing practices. Born, raised, and processed locally in North Carolina. Taken from the chuck (back portion) of the cow, short ribs are quickly becoming all the rage in restaurants and at home. And it's for good reason! Because short ribs come from both the chuck and rib portions of a cow, they combine qualities from both cuts: marbling like a rib steak, and richness and depth like a chuck roast.
