Little Way Farm is a regenerative farm ran by the Sroka family in Siler City. Their 100% grass-fed, grass-finished beef cattle move twice a day to fresh pasture, following intensive rotational grazing practices. Born, raised, and processed locally in North Carolina.
Osso Buco is an Italian phrase that means "bone in a hole". Which, if you look at it, makes sense! In the center of each cut is a bone, rich in marrow. In fact, it's the marrow from this bone that's prized in traditional Italian dishes featuring this meat. Nutritionally, marrow is an important source of Vitamin B12 from grass-fed beef.
How should you cook it? Because it comes from the cow's shank, and is typically a tougher cut of meat, it's usually braised, both to result in tender meat and to release the marrow from the bone. Typical dishes braise the shanks in a hearty wine- and vegetable-based sauce. average 5.3 oz
