Little Way Farm is a regenerative farm ran by the Sroka family in Siler City. Their pigs live, forage, and root in the woods, moving to a new spot once per week. They receive supplemental, non-GMO feed that is NC-grown and milled and 100% traceable.
The name is misleading - the pork "butt" is actually a cut comprising parts of the shoulder, neck, and upper arm of the pig. It has a good amount of connective tissue and is a fairly "tough" cut - meaning that it's best enjoyed with long, slow cooking.
However, both the fat content and the location it derives from means that a pork butt has excellent flavor. This is especially true for woodland-raised pork, as our hogs get constant exercise.
