Fresh lemongrass offers a bright lemony floral flavor. To use in cooking, peel off the tough outer layers and use the tender core for flavoring soups, curries, and marinades. It can be macerated for use in curry pastes. Or simply pour hot water over and enjoy as a lovely tea (this is a great use for the leafy portions). Fresh lemongrass can be frozen and thawed used as desired for around a year. Pairs well with other Asian flavors such as ginger, turmeric, and garlic!
