Our ginger is harvested fresh August through October. Once October arrives, we must freeze the ginger to make it last. We recommend leaving it frozen - you can grate off as much as you need, and stick it back in the freezer for later use. Super easy!
Fresh Ginger is softer and less stringy/woody than older, cured ginger. Fresh Ginger will last up to a few weeks on the counter, or months in the freezer. We make a week's worth of ginger tea at a time and enjoy it almost daily as a health boost. We like to grate ginger into smoothies, stir fries, soups, and salad dressings.
