Surprise! We still have a few pounds of these in good shape. Not sure how we got them to store so well this year, but we don't want them to go to waste. Stock up now! The seed variety that these grew from is Walla Walla Sweet Onion. Due to a federal marketing order designating the production area we aren't technically allowed to call them that. So we're naming them Wallamette Sweet Onions and challenge those imported onions to a taste test! This year we're also trying a variety named Siskiyou Sweet. Bred and grown in southern Oregon, this is a more local version of the Walla Walla. Although called a "sweet" onion, Wallamette Sweets have very little sugar. The "sweetness" is due to their high water content and low sulfur and low pyruvic acid, which is about half that of ordinary yellow storage onions. They also have less tendency to cause tears during chopping. They make a delicious summer onion, great on burgers and salads. They don't store well, so get them while you can.
