November:
Item 1: Turkey Red Whole Wheat Flour. A staple for us since we began growing grains 4 years ago, “Turkey Red” is a dependable heirloom. First introduced to the US in the 1870’s, brought by Ukrainian & Russian Mennonite immigrants, it’s known as an excellent multipurpose flour with a nutty flavor and good crumb structure. 9.3% protein, 2# bag.
Item 2: Medina Soft White Whole Wheat flour. New this season! Medina is a soft white pastry flour, particularly good for whole grain pie crusts or light mild flavored cookies. (not recommended for breads unless mixed with a hard wheat flour) 9% protein, 2# bag
December:
Item 1: Whole Grain Rye Flour makes a great whole wheat Holiday rye bread. We enjoy embracing my Mom’s Swedish heritage with a 50/50 Rye and whole wheat bread. (8.5% protein, 2# bag)
Item 2: Rolled Oats. Use a 2-1 ratio of water to oats, add a pinch of salt, bring to a boil and simmer 5-10 minutes to make a sumptuous oatmeal, or try your hand at making homemade granola. (See note below regarding gluten). 12-13% protein content. 1.5# bag
January
Item 1: Śirvinta Whole Wheat Flour. New this season! Širvinta is a hard red wheat brought from Estonia to the US around 20 years ago. It has a great, nutty flavor, good baking qualities, and is renowned for both yeast and sourdough breads. 9.6% protein, 2# bag.
Item 2: Hull-less Oat Flour. Our stone-ground oat flour can be used to bake tasty low-gluten cookies, muffins, or soda breads. Our family is particularly fond of all-oat pepparkaker ginger cookies. (See note below regarding gluten). 12-13% protein, 1.5# bag.
Item 3: Hard Red Wheat Berries. Wheat Berries have a distinctive savory flavor, and may be cooked as a side dish similar to rice or barley, added to soups and stews, or sprouted for a mid-winter salad. 9.3% protein, 1.5# bag
Note: Oats are naturally Gluten-free, however, some of our processing equipment is shared with wheat, so may contain trace amounts of Gluten.
