Sauce tomatoes have less moisture and seeds than slicing tomatoes, which makes them great for sauces, salsas, canning, and cooking. The lower moisture content means you can spend less time cooking and get more sauce per pound of tomatoes than with fatter slicers. But you certainly don't need to limit them to making sauces, they're also delicious to eat fresh, in all the same ways you eat any other tomatoes!
