Callaloo - Green (Amaranth)
• Jamaican Style: Prepared as a lightly steamed or sautéed side dish using amaranth leaves, often tossed with tomatoes, onions, and garlic, and traditionally served for breakfast alongside saltfish, boiled green bananas, or fried dumplings.
• Trinidadian Style: Prepared as a rich, creamy, soup-like stew using dasheen leaves and okra cooked down with coconut milk and pumpkin, then frothed with a traditional wooden tool called a swizzle stick.
