History
The sunchoke is native to North America.
Biology
The sunchoke plant (Helianthus tuberosus) is related to the sunflower and produces edible tubers. It is hardy and grows readily in cold climates. The PNW is perfect region for growing.
NUTRITION:
Jerusalem Artichokes are very high in inulin, a carbohydrate linked with super intestinal health due to its prebiotic (bacteria promoting) properties.

Have the appearance of ginger root but have a sweet, nutty flavor, slightly like that of water chestnuts when eaten raw. Use/cook like you would potatoes!
