Scapes are the flowering stem of the garlic plant. When they get close to maturity, the plant sends up a stalk to flower and make seeds.
There are several reasons to harvest this scape - garlic seeds don’t make good garlic, it inhibits good bulb growth, but most importantly, they taste great and are another opportunity to get great garlic flavor!
Try them chopped small on your salads and tacos!
Boxcar Acres is owned and managed by Erin and Mikey Richardson, and we are located in Henry County, KY on a 122 acre farm. Together, we grow through all four seasons to produce a wide variety of vegetables and herbs while also caretaking laying hens, bees, and a small herd of beef cattle.
