Kohlrabi (often called a "German turnip") is a crisp, cruciferous vegetable related to cabbage, broccoli, and kale. Its round bulb forms entirely above ground and features a juicy, mild, and slightly sweet flavor reminiscent of a broccoli stem or cabbage heart. Both the bulb and its leaves are edible.
Boxcar Acres is owned and managed by Erin and Mikey Richardson, and we are located in Henry County, KY on a 122 acre farm. Together, we grow through all four seasons to produce a wide variety of vegetables and herbs while also caretaking laying hens, bees, and a small herd of beef cattle. Our passion lies in creating and continually learning about holistic ecological systems that steward the health of our community and the land through seasonal eating. We use organic-equivalent, regenerative practices in our vegetable growing and in our pastures, and we never spray synthetic pesticides or herbicides on any part of our farm.
