Red Russian kale is a hardy, heirloom variety known for its mild, sweet flavor, tender, oak-shaped leaves, and purple veins and stems, which become more vibrant with cold temperatures. This nutritious superfood, rich in vitamins and antioxidants, is versatile and can be eaten raw in salads or used in cooked dishes like soups, smoothies, and stir-fries.
Boxcar Acres is owned and managed by Erin and Mikey Richardson, and we are located in Henry County, KY on a 122 acre farm. Together, we grow through all four seasons to produce a wide variety of vegetables and herbs while also caretaking laying hens, bees, and a small herd of beef cattle. Our passion lies in creating and continually learning about holistic ecological systems that steward the health of our community and the land through seasonal eating. We use organic-equivalent, regenerative practices in our vegetable growing and in our pastures, and we never spray synthetic pesticides or herbicides on any part of our farm.
