Poblanos are a mild chili pepper with thicker walls than most chilis, making them great for stuffing. We recommend roasting or grilling these stuffed peppers. When allowed to ripen and then dried, we refer to the pepper as an ancho chili that is often used in sauce and salsas, including mole sauces.
