We love this eggplant for both it's flavor and white and purple streaks that appear on the skin of the fruit. Just like the Black Beauty Eggplant, this eggplant is great for roasting or broiling. It's also a great eggplant if you want if making eggplant parmesan or cutlets, with it's larger slices. It has a thinner skin so does not require peeling for cooking.
